Lots of folks have asked for some of our recipes, so here they come! After all, one of the biggest joys of growing food is sharing the bounty with friends + family.

Ryan's Corn sticks

If you don't have a corn stick pan just go to a junk shop and you can probably buy any number for not much money, and they are so worth it!  Corn sticks (in our opinion) highlight the best part of corn bread - the crunchy crust.

  • 1 cup AP flour

  • 1 cup cornmeal

  • 3 tsp baking powder

  • 1 tsp salt

  • 1 cup milk, buttermilk or half and half

  • 2 tbsp melted butter

  • 2 eggs

  • Pre heat oven to 400 degrees

  • Whisk dry ingredients together and stir in the wet ingredients.

  • Grease the corn stick pan with fat (not butter) - preferably lard or bacon fat

  • Put the greased pan in the oven till its roaring hot

  • Spoon the batter into the hot molds about half to ¾ full (2ish tbsp. depending on the mold)

  • Bake for 18 to 20 minutes till they are well browned and puffy.

  • Take the sticks out, re-grease and repeat with the remaining batter

 

Eat them right away with lots of butter. They don’t keep well so make them as you need and eat them hot!
